LK No-bake strawberry cheesecake

Ingredienser

  • 80 g of low-carb no-bake crust
  • 2 batches of low-carb no-bake vanilla cheesecake filling
  • 80 g (4 large) chopped strawberries (frozen or fresh)
  • 2 tbs. erythritol or xylitol
  • 1.5 ts. powdered gelatin
  • 1 tbs. cold water
  • (optional) 4 medium fresh strawberries, chopped (the nutrition info below does not include these extra berries)

Instruksjoner

    To make the strawberry swirl:

    First, soak the gelatin in the cold water in a small bowl, set aside.
    Next, puree the 80g of chopped berries with the sweetener until smooth, then cook over medium heat until it starts bubbling.
    Turn off the heat and add the soaked gelatin, mix well, set aside (keep at room temperature).


    To make the cheesecake:
    First, press the crust mixture flat in the cheesecake pan or mold of choice.
    Next, sprinkle the 4 chopped fresh strawberries on top of the crust (optional).
    Pour the room-temperature no-bake cheesecake filling over top and tap the pan to pop any large air bubbles.
    Spoon the warm strawberry puree on top of the cheesecake batter in in dollops, leaving blank spaces in between of plain cheesecake. (see video above).
    Using a thin chopstick or similar utensil held vertically, swirl the strawberry puree with the cheesecake batter (make sure not to scrape the crust underneath, nor move the strawberry chunks).
    Place the completed cheesecake into the fridge to chill for a minimum of 2 hours (longer if doubling this recipe).
